Fabulous Rum Cake!

I changed this a little because I used organic yellow cake mix, and organic pudding.  I also used 8 year old dark bacardi- which gave it a superb flavor.  And I punched holes in the bottom, and poured the glaze on from the bottom.  I think I went over the cake about 4 times- spooning the glaze on slowly so it would absorb. Also, I used pistachio oil, instead of vegetable oil.  The cake was superb!

Slow Cooker Canadian bacon and cheese risotto with truffle oil

8-12 slices of Canadian bacon cut in cubes
1 cup cheddar or jack shredded cheese (or a blend of cheeses)
1 cup arborio rice
32 oz of vegetable broth (or chicken, if you prefer)
1/8 cup truffle oil
1/8 cup olive oil
1 can button mushrooms (or you can add more, if you want more mushroomy goodness)

Put rice in slow cooker with broth and oils.  Cook 1 hour and 45 minutes.  Stir in bacon, cheese, and mushrooms.  Put lid on, turn cooker off, and let sit 15 minutes.  You can also add a splash of heavy cream for an even richer risotto (I don't find that necessary).  Serve and enjoy!  I serve this with a simple side of veggies with mushrooms.

BEST easy chocolate frosting with real chocolate (Theo's)

You will need:
1 3oz bar Theo's chocolate (I used peppermint stick)- but you can use 3 oz of any chocolate
3 cups powdered sugar
1 stick margarine- softened to room temp
1 tsp vanilla extract
1/4 cups whole milk or cream- room temp

Whip butter and add vanilla and liquid (milk or cream)- slowly beat in powdered sugar until smooth.  Melt chocolate bar in microwave- do NOT overheat.  Check every 15 minutes until it is complete softened.  You do NOT want it bubbling.  Use a spatula to get out all the chocolate, and quickly mix the chocolate into the vanilla frosting.  This is delicious as soon as you make it (soft and fluffy).  IF you leave it a while it will dry out a bit, but is still fabulous.  It's like candy on your cake, and it's a family favorite.  If you vary the flavor of candy bar, and play around with the extracts, you can make some really interesting combinations.

Fast and Easy Crockpot Indian Golden Lentil Curry Soup with ham and onions

3 cans of Amy's golden Lentil Curry Soup
1 cup chopped ham
1 large onion copped small (or diced, if you don't like large pieces)

Put everything in the crockpot  and cook for 4 hours on high, or 6 on low.  Enjoy!  Soup should be bubbling- if your crockpot cooks more slowly, just add a little more time.  And this is great on toast!  Or served with a poached egg!

Lemon Curd in the Microwave!

Loved this recipe:

It's super easy.  I used Very Large Costco lemons- so I only needed 2 to cut 1 cup of lemon juice and enough lemon zest.  I could not believe how easy and delicious this was.  I will be eating a lot of this.  Hopefully my clothes will still fit.
