Copper River Salmon in parmesan crust

Preheat oven to 350. Take large fillets, put in large baking pan- butter pan lightly if things tend to stick to it.  Pepper fish to taste, and then spread lightly and evenly with mayonnaise.  Finally, sprinkle fish with Parmesan cheese- I use a mix of shaved Parmesan and the Kraft powdered Parmesan.  Finally, pour a small amount of milk in the pan- 1/2 way up the sides of the fish. Bake until fish flakes easily.  Milk will bubble up- perfectly normal (and delicious!)

I served my fish with baby squash, sauteed in butter with sprouted sunflower seeds, pepper, and a sprinkle of the Kraft Parmesan cheese- about 5 minutes in to cooking.  Make sure to stir occasionally, and cook until tender-crisp (or cook more thoroughly, if you prefer that).
