Really Easy Shepherd's Pie

If you plan ahead on this, it will be super easy!

You will need:
2 1/2 cups chopped onion
2 1/2 cups sliced carrots
2 cups diced celery
5 cups mashed potatoes
21 oz ground beef (I use one square of the Costco organic beef 3 pack)
pepper
gravy (turkey or brown or mushroom)- 1 cup


Saute onions and carrots.  Push to side when onions begin to get transparent, and add beef.  Cook beef until most of the pink is gone- see pictures:
When the beef is almost cooked, add celery, and cook till beef is done, then add gravy, stir, and cook for about 5 minutes, put in casserole dish- leaving at least 1 1/2 inches to the top of the dish.  Press meat and veggie mixture down- see below.



Top veggies with the mashed potatoes, and then texture the potatoes with a fork.
Bake at 350 until the mixture bubbles from the sides, and the peaks of the potatoes are brown:

This will hold in a warm oven for quite a while- or you can halt the cooking a tiny bit early, and keep it at 200 while you get other foods ready.  You WILL enjoy this- it's wonderful.  And you can put just about anything in it you want to- this just happens to be a combo I like.
