Peanut Chicken Soup!

Start with a chicken carcass.  I usually bake a chicken, and then throw whatever we don't eat in to a stockpot, and put in enough water to almost cover the chicken:
I also put in two whole white onions, chopped.

Cook the chicken until the meat falls off the bones.  Then fish out the bones (or strain the soup, and get all the bones- although that's a lot of work, and I never do that).

Add peanut soup mix, and two TBS curry powder:

Then cook for about 40 minutes- until the soup thickens nicely.  You can garnish the soup with chopped green onions, chopped peanuts, or serve it plain- it's wonderful soup!

You can also add potatoes, chopped or sliced carrots, sweet potatoes, celery, celery root, and cream- as well as just about anything else you think might be good.
