Here's a super easy breakfast.
For the eggs- take slices of deli ham, and put one or two slices (depending on how much ham you want to eat) in a non-stick muffin pan, pushing the middle of the slice to the bottom- so the ham forms a "cup". Mix eggs (for a 12 cup muffin pan i used 6 medium eggs) with taco seasoning (or any seasoning) and cheese (I used 1/2 cup). Spoon egg mixture in to "cups" and bake at 350 until eggs are set the way you like them. Use a toothpick to check for doneness.
Since mine were taco seasoning flavored, I chopped up two tomatoes, and 1/2 a cucumber, and mixed the chopped veggies with salsa- voila, easy side salad :-)
I served it with watermelon for "dessert".
The eggs reheat really well- so you can make a bunch and eat some of them later. They'd also be super for picnics.
